Botrosecco is produced on the estate Le Mortelle, owned by Antinori in the heart of the Maremma a few kilometers from Castiglione of Pescaia. Acquired in the 1999 the family Antinori from the conviction that the area, still emerging, was highly suited to the production of high quality wines. The winery, partly underground on top of the hill overlooking the estate, was built with an eye to regard to the impact environmental. Built only with natural materials, it uses the thermoregulation of the rocks in the soil, the wine production process is designed by "fall," with the harvest being taken to the upper floors after the grape harvest, to vinification to aging that takes place in the most basement floors in barriques.
Botrosecco is the product of the estate's two most important vineyard types, Cabernet Sauvignon, which makes up 60 percent, and Cabernet Franc, which rounds out the whole. Harvested in September, the Cabernet Franc, which gives the wine its elegance and structure is picked in the second half of the month, while the Sauvignon, with its typical red fruit aroma ripens in the last week. The 170 hectares of vineyard soils are medium-textured, sandy and loamy with a siliceous-clay composition. Upon arrival at the winery, the best grapes are destemmed and gently crushed and brought to fermentation in stainless steel tanks at a temperature of 25°C, then transferred to other tanks where malolactic fermentation takes place, completed by the end of the year. Before bottle aging, the wine rests in barriques for 12 months.
Tasting Notes: by ruby red color. Rich and intense, characterized by sensations of ripe small berries, such as raspberries and blackberries; hints of wild mint and eucalyptus combine with spicy notes of white pepper, completing the flavor profile. Enveloping, savory, with fine tannins and a lingering aftertaste of fresh fruit and cocoa.
Pairings: perfect for aperitif to after dinner. It is versatile in pairings. Our recommendation : Tagliatelle with wild boar sauce. Recommended with: roasts, pork, meat entrees.
