L'Astoria Prosecco Treviso Millesimato Extra Dry, is produced in Conegliano-Pieve di Soligo, the historic heart of the D.O.C.G. Prosecco of Valdobbiadene and a UNESCO World Heritage Site, in the cellars of Astoria which, with its brand and trademark, is known internationally for its excellent, competitively priced proseccos.
In its evolution Astoria has sought to diversify itself from other wineries through the creation of very sophisticated labels with multifaceted and distinctive lines that at the same time go well with competitively priced products, leaving a sensory analysis that starts with sight and culminates with smell and taste.
Among the many products, one of the best sellers of the Astoria is precisely the Prosecco Treviso Millesimato Extra Dry, the winery's flagship and charmat method sparkling wine. Harvesting is done manually at the time when the grapes are at their maximum chemical-organoleptic balance followed by soft pressing to keep the berry whole and free of lesions.
This is followed by static decantation of the must, the process of which is carried out to clarify the must without the aid of clarifiers; the treatment is carried out by cooling the must at low temperatures. Fermentation initially takes place in steel vessels at 16°c, but before this is completed it is transferred to an autoclave, with still high residual sugar, for frothing.
It is then aged between 20 and 25 days on the lees and left to rest for about 5 weeks before release. All this allows the wine to absorb the characteristic aromatic scents that will be enhanced when the product is finished with a fruity explosion that is a pleasure for the palate.
Tasting Notes: very fine-grained, continuous perlage. Straw yellow color discharged with greenish reflections. Intense, fruity bouquet with aromas of peach and melon. Taste soft, full, harmonious, aromatic for typicality.
Pairings: perfect with appetizers, fish, shellfish and cheese.
