Valpolicella Ripasso Le Poiane is made from ancient native varieties selected by the company Bolla, a historic pillar of Veronese viticulture, which produces about 15 million bottles, representing at its best the quality of the wines and appellations of this renowned region.
The term "ripasso" refers to the traditional production technique performed in February, which involves a 15- to 20-day maceration of the fermented pomace of Amarone or Recioto in Valpolicella wine, resulting in a second fermentation that gives the wine greater complexity and smoothness.
Maturation in wood for about 12-18 months completes this true work of winemaking art.
Tasting Notes: by. ruby red color intense, fine spicy and peppery scents are perceived on the nose. In the mouth it is velvety, soft, with elegant tannin and good aromatic persistence.
Pairings: perfect with rich festive and traditional dishes, best with red meats or aged cheeses; also try it at the end of a meal, as an elegant meditation companion.
