The Riesling Vigna Castel Ringberg from Elena Walch is made from 100% Riesling grapes harvested by hand in the vineyard of the castle of the same name erected by the Habsburgs in 1620 near Lake Kaltern. The soils here are partly steep and partly hilly and composed mainly of dolomite rock and limestone, at an elevation of 330-400 meters above sea level.
White vinification began with soft pressing, followed by fermentation of the must in stainless steel barrels at a controlled temperature of about 18°C. Aging was several months in stainless steel in contact with the yeasts.
Tasting Notes: by straw yellow color brilliant, the nose immediately expresses all the extraordinary typicality of great riesling, still very young. Notes of white and yellow-fleshed fruit chase very citrusy notes ranging from lime to grapefruit before a slightly mineral undertone. Dry in the mouth, characterized by vibrant acidity and textbook freshness. Balanced and very pleasant, this is a taste of excellent structure and elegance, closing with a finish that stands out for its personality.
Pairings: dry and responsive, it was born to be paired with products with a marked marine character. A pasta with tuna roe or sea urchins.
