The Tignanello, produced by the winery Antinori, is a still red wine that enjoys the Tuscan IGT designation. It is an unconventional wine, considering that it was the first to be blended in non-traditional ways, without the inclusion of white grapes.

The grapes come from vines that are 85 percent Sangiovese, 10 percent Cabernet Sauvignon, and 5 percent Cabernet Franc. Careful climatic conditions are required for all three varieties as far as harvesting is concerned. Fermentation takes place at a temperature of around 27 degrees, never rising above 31, so as to preserve the organoleptic properties of the three grapes.

Fermentation is first alcoholic, after which the wines are placed in new oak barrels, where a second malolactic fermentation takes place in order to reduce acidity. Aging takes 12 months, and takes place in barriques. After this stay, the wine is bottled, where it undergoes an additional year of rest.

Tignanello is born in Tuscany, and more precisely in the vineyard of the same name, located on the Tigneto estate between 350 and 400 meters above sea level, covering more than 47 hectares. The soil is of calcareous origin, with numerous tuffaceous components, which help give the wine its peculiarities, also in terms of longevity (about 25 years). The validity of Tignanello wine, have also been recognized by Bibenda and Gambero Rosso, which awarded it 5 bunches and three glasses respectively, synonyms of excellence vincola.

Tasting Notes: by ruby red color very intense. Well-expressed varietal aromas with notes of dark fruit. In the mouth it is dense, thick and intense with a complex structural texture, thanks also to the acidic level that supports it. The wine is long and persistent and notes of chocolate, coffee and citrus jam emerge in the aftertaste.

Pairing: Perfect with pasta dishes with sauce, red and white meats, sliced meats and aged cheeses, meditation wine.

Vinification For all three varieties, fermentations were conducted with average temperatures of 27 °C, never exceeding 31 °C, in order to preserve as much as possible olfactory sensations and typicality of the fruit. As in previous vintages, great care was taken in the winery during the fermentation and extraction phases, carrying out more frequent but less intense delestage and pumping over, in order to obtain the best results from the point of view of color and tannin.
Ageing After racking, carried out at alcoholic fermentation finished, the wines were placed in new oak barrels, with the successful intent of allowing the malolactic fermentation within the end of the year. They were then blended, rested for about 12 months in barriques, racked and finally, after careful tasting barrique for barrel, the wine is bottled.
