he standard-bearer of Castellare, twice in Wine Spectator's Top 100, repeatedly three glasses and five bunches. Pride of the winery for being able to demonstrate the greatness of Sangiovese accompanied by Malvasia Nera.
Tasting Notes.: by. ruby red color intense. Great olfactory concentration, thanks to the presence of ripe red fruit that leads back to notes of jam, but also spices, vanilla and licorice. In the mouth the wine is characterized by a dense and elegant texture, also supported by the important acidity of the Sangiovese, the tannins are absolutely sweet and the finish long and very persistent.
Pairings: Excellent with cured meats and savory meats, with richly succulent dishes and flavorful, aged cheeses. Much appreciated in combination with Pecorino Tuscan and Parmesan cheese.

Tuscany has discovered itself to be an exceptional land for Merlot with world-first wines such as Masseto. This pure Merlot from Castellare, thanks to the special position of the vineyard, has a personality rare to be found even in the best international Merlots again for elegance. Since the first vintage it has been called a monument to wine excellence.
Tasting Notes: by ruby red color very intense, with slight violet hue. The nose has intense, clean, pleasing, refined and elegant aromas that start with hints of plum, black cherry and rhubarb followed by good aromas of blackberry, currant, dried violet, licorice, tobacco, vanilla, nutmeg and hints of cinchona and bell bell pepper. In the mouth has excellent correspondence to the nose, a slightly tannic attack and pleasant smoothness, however well balanced by alcohol, full body, intense flavors, good tannins, very pleasant. The finish is very persistent with long and good flavors of black cherry, plum and black currant.
Pairings: Perfect with red meats. In particular, it is excellent with liver and wild boar.
- Coniale 2020 IGT Tuscany Cabernet Sauvignon
Cabernet Sauvignon in purity, to measure Castellare's production capabilities with the rest of the world. Work in the vineyard and winemaking to achieve more elegance than power. A result that, beyond the strong marking of the Cabernet, illustrates well the characteristics of the terroir.
Tasting Notes: by ruby red color intense. The aromas are intense and complex, of blackberry, currant, blueberry, cherry, plum and date to which are joined by floral notes of violet and rosehip. In the mouth it is warm, soft, intense and velvety, with fine, silky tannins well blended into the structure. The finish is long and persistent with a decidedly fruity aftertaste.
Pairings: goes well with roasts, steaks and red meats in general. Game and aged cheeses are also perfect for tasting this wine at its best.
