The Aglianico "Bocca di Lupo" by Tormaresca is a robust wine from Puglia, but one of great elegance, aged for 15 months in barrique. The nose is distinguished by its fruity, ethereal and spicy notes. On the palate it is broad and persistent, with tannins imparting a well-defined structure.

Tasting Notes.: by intense ruby color with magenta highlights. Intense and elegant. Ripe red fruit notes well spicy hints of vanilla and chocolate, balsamic. Rich flavor, long taste persistence with vibrant but never invasive tannins.

Pairings: perfect with pasta sauces, roasted and grilled meats, red meat stews, game and aged cheeses.

Vinification Upon arrival at the winery, the grapes were destemmed and placed on a sorting table for further selection so that only the perfect berries reached the vats of vinification. The alcoholic fermentation took place in stainless steel tanks at a controlled temperature of 26-28 °C. The maceration lasted for 15-18 days and was managed with punching-down interspersed with délestage and brief pumping-over at the end to perform a gradual and gentle extraction. During this stage, it was decided to remove a good part of the seeds to prevent them from bringing astringent sensations.
Refinement Once fermentation is complete, the wine is transferred to barrique of oak, where the malolactic fermentation and the necessary refinement. Following bottling Bocca di Lupo rested at least 1 year in bottle.
