Matching Excellent as an aperitif for caviar canapés and fish carpaccios smoked, it also enhances celery and saffron risottos, simple vegetable pinzimoni and olives all'ascolana. It goes well with raw fish and is ideal with tempura, sushi, sashimi and, in general, with the spicy and sweet-and-sour foods typical of Asian cuisine, eels and, thanks to its good texture, with grilled seafood and fine Catalan-style lobster. One suggestion: try it with pizza!
