A versatile white wine, synonymous with guarantee, which is able to reserve intense sensations when young and deep emotions when uncorked in a few years. This is how the Pinot Bianco DOC from the Ca' Bolani winery presents itself, whose grapes come from one of the cru the winery owns within the Friuli Aquileia DOC.
The grapes, after harvest, are picked with the whole bunch, then pressed without destemming; fermentation takes place in oak barrels, where the wine remains to mature for 9 months, six of which are spent in contact with the yeasts. The "Opimio" is a label in which the typical varietal nuances are found, to be sipped during a pleasant spring fish dinner.
Tasting notes: On visual examination, it presents itself with a slightly golden color, crossed by reflections tending to greenish. The nose is dominated by sensations of white-fleshed fruit, enhanced by aromas of herbs and wild flowers. On the palate it is medium-bodied, vibrant, marked by a savory and fresh sip that envelops the palate with softness.
Pairings: finds its gastronomic vocation with fish menus, but does not disdain pairing with meat entrees as well. Try it with a tasty vitello tonnato.
