The St. John of the Hall is produced by Antinori the land adjacent to the Castello della Sala, an ancient medieval castle built in 1350 by supporters who came to Italy with Charlemagne with the goal of conquering Orvieto. The family Antinori given the area's high vocation for white wine production, in 1940 decided to buy the castle, which had been neglected for decades, and restore it to its former magnificence. In the 170 hectares of land, only white grape varieties are produced, except only for pinot noir, both native and non-native, in order to express with each wine a modern vision of an ancient terroir.
The winery has a modern conception of winemaking and is designed to ensure quality and freshness in the wines produced, but without detracting from the historic cellar already present since the 16th century in the stronghold's basement. L'Antinori San Giovanni della Sala comes from a blend of indigenous grapes, Grechetto and Procanico, with Pinot Bianco and Viognier to produce an Orvieto Classico DOC that tells a new style all its own.
The four grape varieties, grown in soil that tends to be clayey and rich in fossil shells, are harvested throughout the month of September. Part of the must is cold macerated in contact with the skins for about 6 hours at about 10°C while the remainder is pressed. Vinification, to enhance the characteristics of each variety, takes place separately in stainless steel tanks at 16°C.
Aging arrives on its lees for a few months to improve structure and elegance before being blended and then bottled. San Giovanni della Sala has been produced since 1990 is recognized for its intensity and freshness and fruity explosion on the palate.
Tasting Notes: Light straw yellow in color with greenish highlights. The nose is striking for its very fine bouquet, characterized by pleasant floral and ripe fruit scents such as peach and pineapple. On the palate it is enveloping, balanced, persistent and supported by good freshness.
Pairing: Perfect with seafood appetizers, risotto, grilled fish and aged cheeses.

Vinification | Upon arrival at the winery, the grapes were vinified separately by variety to enhance the characteristics of each varietal. Part of the must underwent a maceration cold, remaining in contact with its skins for about 6 hours at a temperature of 10 °C, before being combined with that obtained from the soft direct pressing of the grapes. The must thus obtained was transferred to stainless steel tanks where the alcoholic fermentation at a controlled temperature of 16 °C. |
