The Calafuria Rosè is produced by Tormaresca, the company that bears the name and represents Antinori in southern Italy. Founded in 1998, it consists of 2 estates: Bocca di Lupo, located in the Murgia Barese and Masseria Maime, located in the beating heart of Puglia, Salento. The goal of Antinori is precisely to enhance the Apulian terroir, which, despite having long been among the main producers of wine grapes in the peninsula, has never been able to express its identity to the fullest.
Tasting notes: by coral pink color. Delicate floral aromas of rose and lavender, accompanied by persistent fruity notes. Pleasant wine with the right balance between hardness and softness. The intense taste sensations are well enhanced by a pleasant savoriness.
Pairingi: frittura di pesce, focaccia barese, bruschetta burrata e pomodorini.

Harvest | negroamaro grapes from Rosè were harvested manually on about the same dates as in previous years, around September 7-8. |
Vinification | The grapes are hand-selected, gently destemmed and softly pressed. The must obtained is placed in stainless steel tanks at a temperature of 10°C to achieve natural decantation. Subsequently, the grafting of the alcoholic fermentation which is conducted at low temperatures (16°C) to keep the primary aromas intact. |
Aging | This is followed by a short period of refinement in steel and 4 months of aging in bottle. |
