The wording on the label "Gran Selezione" goes to indicate qualitative excellence within the Chianti Classico DOCG; this is an important choice, which aims to enhance the value of fine productions, where the grapes that can be used and the period of refinement are characterized by particularly restrictive standards, aimed at making wines of absolute depth. Proof of this is "Il Grigio" from the winery San Felice, the result of a skillful blend based on sangiovese to which several indigenous grape varieties are added to increase the aromatic proposal on the nose. The grapes ferment in stainless steel, macerating 22 days at a temperature of 28-30 °C, then aged in wood of different sizes for 24 months and in bottle for another 8 months. This is a wine that lends itself well to aging, to which international critics give truly remarkable scores. Impossible not to be fascinated by it.
Tasting Notes.: nn the glass it has a ruby red color. The aromas on the nose are intense, and develop around notes of red fruit, violets, licorice, leather, pepper and herbs. In the mouth it is delightful, silky, with elegant, fine tannins and an excellent acid shoulder that helps outline its structure. It closes with a lingering finish.
Pairings: ideal with game, roasted and grilled meats and aged cheeses.
