Intense ruby red. The complex bouquet recalls notes of red fruits, more specifically cherry, sour cherry and black cherry that blend with hints of herbs, including sage and lavender. Intriguing spicy notes reminiscent of cocoa bean. The entrance into the mouth is voluminous, energetic. Excellent red fruit retention; freshness and acidity are linked to raspberry and currant. Spicy notes envelop the palate. Good persistence. Young fresh and silky tannins.

Vinification | Once hand-harvested, the grapes were vinified in stainless steel tanks at counter temperature (max 26°C) and fermentation was conducted spontaneously. The maceration on the skins allowed a perfect extraction of the polyphenolic substances, assisted by frequent pumping over in the initial stages of fermentation, interrupted by delestage in the intermediate stage, and then resumed in the final stage. The malolactic fermentation was completed in steel before the winter. |
Aging | Then the wine was left to mature in 50 hL oak barrels for 24 months. It then rested in bottle for several months. |
