Only a few areas in the world have the capacity to produce grapes suitable for making a sparkling wine base.
Indeed, it is necessary for the soil and climatic characteristics to achieve certain, but fundamental balances that allow the grapes to ripen while maintaining characteristics that are by no means taken for granted.
Tasting Notes: minute and continuous perlage. Straw yellow.. Enchants with elegant tones of peach, red currant, cedar, lily of the valley and white flowers, fine spices and a touch of rye. In the mouth it is gritty in flavor development, taut and laden with mineral savoriness.
Pairings: appetizers, fish, shellfish, cheeses.

Ageing | Before the summer with the draught begins the long journey in the bottle in which, in addition to the second fermentation, the yeasts will accompany the sparkling wine for at least 48 months toward the time of disgorgement and then rest in the cellar another 3 months before marketing. |
