Amarone della Valpolicella Ripasso is a red wine produced by the winery Astoria. Manually harvested grapes are left to dry in fruit lofts located on the hillsides until January, after which they are pressed and undergo a traditional red wine-making process with maceration lasting 20-25 days.
Once this stage is completed, the wine is racked and transferred to oak barrels, where it remains for two years. At the end of this period, bottling takes place and the wine ages in the bottle for several months.
Tasting Notes: deep, intense color with garnet hues. The nose is complex, spicy, with hints of cinnamon, cherry jam and fruit under spirits. On the palate the wine is rich, with notes of black cherry, vanilla and coffee grounds.
Pairings: ideal with meat, cheeses, aged cheeses, pork.
