A Sauvignon with inherent complexity, based on the distinctive characteristics that enhance the typicality of the grape variety used. Marchesi Frescobaldi, in the Friuli estate of Attems, created this Venezia Giulia IGT to express an aromatic white, characterized by vegetal and herbaceous notes on the nose and a savory taste that reflects the essence of the sauvignon grape.
Part of the must undergoes cold maceration, followed by fermentation in temperature-controlled steel containers for 12 days. Final aging takes place for 4 months in steel with yeast contact.
This versatile white wine is perfect both as an aperitif and with meals.
Tasting Notes.: Straw yellow in color, with beautiful green highlights. The bouquet is distinctive with boxwood, tomato leaf and an intense hint of grapefruit zest. Sensations that expand on the palate, which is exuberant with characteristic acidity. Lime blossom and lime accompany the lingering, bright finish.
Pairings: Perfect to enjoy with asparagus dishes, green and white. It is also interesting to pair with fish and vegetable tempura.

Vinification | A small portion of the crushed grapes (15%), benefits from a short maceration at a cold temperature sheltered from the air. The juice obtained from the soft pressing of the grapes is left decanting for 24 to 48 hours. It subsequently begins, on must clear, the alcoholic fermentation, conducted at 18 °C for 15 days. The vinification is carried out in steel tanks, keeping the wine at low temperatures, thus avoiding the malolactic fermentation. |
