The "Prior" carries in its name an unquestionable truth: Bortolomiol was in fact the first winery to decline Valdobbiadene Prosecco DOCG in the Brut version, when all other wineries were still making it exclusively as Extra Dry.
Tasting Notes.: To the eye, it presents itself with a straw yellow color bright and intense; the perlage is fine and long-lasting. The olfactory spectrum shows fruity notes of green apple, peach and plum, well mixed with floral scents of wisteria, lily of the valley and herbs. The palate is striking for its great freshness and agility; it is dry with a good balance between savory and acidic components. It closes with a moderately persistent finish.
Pairings: the ideal aperitif wine, where its directness lends itself to a large number of recipes and preparations. Excellent with seafood cuisine, it is to die for with lard crostini.
