The Prunotto Nebbiolo d'Alba Occhetti is produced by the winery Prunotto, today specializes not only in the creation of Red wines, whites and sparkling wines, but also rosé wines and spirits of various kinds. It was founded in 1923 when the winemaker Alfredo Prunotto decided to take over the Cantina Sociale "Wines of the Langhe," to bring it back into vogue.
With the commitment of Alfredo and his family, the production of wines began. The winery then passed to his friend Beppe Colla, who allowed it to grow and continue the production of excellent quality wine.
The plants of Nebbiolo grow luxuriantly in the Alba area of Piedmont on a very special soil, composed partly of sea sands and partly of gravelly, clay-limestone sediments.
The harvest of the Nebbiolo d'Alba Occhetti takes place in early October. After the harvest, the grapes are brought to the winery, cleaned and crushed. For about 10 days maceration and fermentation take place, at a controlled temperature of 29°.
This is followed by the first stage of aging, which takes place in two different types of containers. Part of the product is aged in barrels, while another part is aged in third-passage barriques. This phase lasts about 12 months.
The wine is then bottled, but before marketing it needs an additional aging phase. This lasts about 4 months in the cellar before being put on the market. Today the Prunotto Nebbiolo d'Alba Occhetti has the DOC (Denominazione di Origine Controllata) label.
Tasting Notes: by ruby red color of good intensity tending to garnet. Elegant bouquet with hints of raspberries, rose and licorice. Full, harmonious flavor with a long aftertaste. The Nebbiolo Occhetti is a smooth and elegant wine.
Pairings: because of these characteristics it goes well with warm appetizers, first courses and meat dishes that are not too rich.
