Produced exclusively from pinot noir grapes is, in a way, the alter ego of Cervaro della Sala: together, in fact, they represent the two different expressions of the complex and refined soul of the Castello. A red wine as dynamic as it is elegant, whose vinification takes place in steel and subsequent maturation in barriques for a total period of about 8 months. A further bottle aging of about 15 months leads to a wine of rare stuff, exquisite, undoubtedly among the best interpretations of the type outside France.

Tasting Notes.: by. color rgarnet bone bright, the nose recalls delicate aromas ranging from spices to hints of violets and roses with hints of small red fruits. The palate is soft and savory, with refined, silky and sweet tannins. The finish is long and balanced, available right away but with great aging potential.

Pairings: a whole meal, it is exalted with roasts of all kinds, especially pork. Excellent with medium-aged sheep's milk cheeses.

Vinification After destemming and a partial crushing, the grapes were introduced into small truncated steel tanks. The maceration lasted about one week. The alcoholic fermentation took place at a temperature of 26 °C and ended in French barriques where the wine also completed the malolactic fermentation.
Aging L'aging in barriques continued for 10 months, after which, bottling was carried out. After a period of refinement in bottle for 8 months in the historic cellars of Castello della Sala, it was introduced to the market.
