Among the organoleptic characteristics of Barbera is undoubtedly its freshness (it is considered one of the most acidic Italian grape varieties), which makes it a gastronomic wine, endowed with aromas of fresh fruit, red flowers and a hint of spice. The pairings with Barbera are almost endless, but a few suggestions can undoubtedly help. For an all-Barbera dinner, we suggest starting with a young, lightly sparkling wine, ideal with cured meats and stuffed pastas, and then continuing with a more complex version that has been aged in wood, great with baked meats.
