The rolling hills and ideal microclimate make this portion of Umbria highly suited to viticulture. The estate extends around the castle for 550 hectares, 160 of which are occupied by vineyards. They are located at an altitude between 200 and 400 meters.

The soil has a clay composition. The climate is characterized by harsh winters and hot summers. Finally, important is the role played by morning mists, which are decisive for the good ripening of the grapes.

The grape harvest begins in a period between the end August and early September when, after careful evaluation, the right ripeness is achieved. The grapes are placed in crates to prevent the grapes from breaking. Following pressing soft, the musts are placed in barriques where the alcoholic fermentation.
