L'Antinori Cervaro Castle of the Hall has a long history behind it that began in 1985. In fact, the first production of this wine, which is a flagship for the winery, dates back to this time Antinori.
The family, in fact, purchased the estate in 1940. Previously, in the 14th century it had belonged to the Counts of Cervara. Hence the name of the Cervaro della Sala wine. The area is among the most picturesque. Castello della Sala straddles Umbria and Tuscany just a few kilometers from the city of Orvieto. The rolling hills and ideal microclimate make this portion of Umbria highly suited to viticulture. The estate extends around the castle for 550 hectares, 160 of which are occupied by vineyards. They are located at an altitude between 200 and 400 meters.
The soil has a clay composition. The climate is characterized by harsh winters and hot summers. Finally, important is the role played by morning mists, which are decisive for the good ripening of the grapes.
The grape harvest begins in a period between the end August and early September when, after careful evaluation, the right ripeness is achieved. The grapes are placed in crates to prevent the grapes from breaking. Following pressing soft, the musts are placed in barriques where the alcoholic fermentation.

After malolactic fermentation takes place, the batches of Chardonnay and Grechetto are assembled for bottling and subsequent aging. The bottles of theAntinori Castello della Sala Cervaro della Sala rest, then, in the historic cellars until released for sale.
Tasting Notes: from the color gintense straw yellow with shades of green. The nose is characterized by open notes of chamomile and stonecrop. on the palate it is savory, with characteristic delicate aromas of vanilla and butter that combine elegantly with hints of exotic fruit to compose a well-delineated bouquet. It is still a young wine that will evolve well in the years to come.
Pairings: Perfect for fish appetizers, fish entrees and stewed meats.
