Tasting notes: Of ruby red color intense. Great olfactory concentration, thanks to the presence of a ripe red fruit that leads back to jam notes, but also spices, vanilla and licorice. In the mouth, the wine is characterized by a dense and elegant plot, also supported by the important acidity of the Sangiovese, the tannins are absolutely sweet and the long ending and of great persistence.
Combinations: Excellent with salami and savory meats, with dishes rich in succulence and tasty and seasoned cheeses. Appreciated a lot in combination with Tuscan pecorino and Parmesan.

Since the first year, a monument to the wine of excellence has been called.
Tasting notes: Of ruby red color Very intense, with light purple shade. On the nose intense, clean, pleasant, refined and elegant aromas that open with notes of plum, black cherry and rhubarb followed by good aromas of default, currant, wan viola, licorice, tobacco, vanilla, nutmeg and hint of china and pepper. In the mouth it has excellent correspondence with the nose, a slightly tannic attack and pleasant softness, however well balanced by alcohol, full body, intense flavors, good tannins, very pleasant. The ending is very persistent with long and good memories of black cherry, plum and currant.
Combinations: Perfect with red meats. In particular, it is excellent accompanied by liver and wild boar.
- Conial 2018 IGT Toscana Cabernet Sauvignon
Cabernet Sauvignon in purity, to measure the productive skills of Castellare with the rest of the world. A job in the vineyard and a vinification to obtain more elegance than power. A result that, beyond the strong marking of Cabernet, illustrates the characteristics of the terroir well.
Tasting notes: Of ruby red color intense. The hints are intense and complex, of blackberries, currants, blueberries, cherries, plum and dating to which the floral notes of purple and canine rose are joined. In the mouth it is warm, soft, intense and velvety, with fine tannins, silky and well mixed in the structure. The ending is long and persistent with a decidedly fruity aftertaste.
Combinations: It accompanies well with roasts, steaks and in general red meats. Even the game and the aged cheeses are perfect for tasting this wine at best.
