This label represents the conscientious and refined winemaking skills of Alto Adige's indigenous grapes by technicians Colterenzio (Kellerei Schreckbichl). Vinification involves the use of 80% Merlot to 20% Cabernet varietals. They come from 15- to 20-year-old espalier plantings, with a density of 5,000 vines per hectare.
The vineyards are located at an altitude of about 250 maximum 430 meters above sea level. The vines stand on soils composed of morainic and porphyritic deposits of alluvial origin.
Vinification involves fermentation on the skins with subsequent maceration for 7-10 days. This is followed by malolactic fermentation in barriques. In spring the first blending of the two varieties takes place, followed by aging in small oak barrels for 14 months. After careful filtration and bottling, the wine ages for an additional 12 months in bottle.
Tasting Notes.: To the eye, the wine is of garnet red color. The bouquet is rich and intense and deep aroma of black currants, flanked by notes of cocoa, cinnamon and fine hints of vanilla. The taste is broad and elegant, with velvety tannins, complex, full-bodied and refined.
Pairings: excellent with game, red meats, aged cheeses. The optimal serving temperature is 16° C in a wide goblet that allows the wine to oxygenate.
