The selection of the Oils Donnafugata is enriched with a special novelty: the Extra Virgin Tonda Iblea, a small production of value from the Tenuta di Vittoria obtained from the eponymous native cultivar typical of this territory.
La Tonda Iblea typically grows in the eastern area of the island. In particular, the most widespread area of this type of tree is represented by the provinces of Messina, Catania and Siracusa tonda iblea(but its presence has also been recorded in the territory of Trapani and Agrigento), where it is also known by the synonyms of Giarraffa, Alimena, Bruscarinu, Caloria, Prunara, Tonda Nera and Vitriolo.
Used indifferently for table consumption and for the production and sale of extra virgin olive oil, the Tonda Iblea finds its ideal habitat in the hilly areas up to a maximum of about 600 meters above sea level, and is therefore a cultivar that is very resistant to cold temperatures.
This, moreover, makes it rather difficult for fly attacks to occur and allows it to not to resort to pesticides thus preserving the quality of the product. Also very good is the resistance to Lead's Evil and Cotonellus.
A superior category olive oil is born, obtained directly from the olives through a cold extraction process and solely by mechanical processes.
Tasting Notes: Tonda Iblea oil from Donnafugata is bright green-gold in color; the nose is intensely fruity, with clear hints of green tomato followed by notes of fresh aromatic herbs, artichoke and freshly mowed grass. The palate is intensely fruity, with an excellent balance between bitter and spicy; a full-bodied, enveloping and harmonious oil.
Pairings: Excellent on boiled and grilled vegetables, on meats, and perfectly enhances Mediterranean dishes.
